Potato Cauliflower curry

Ingredients
  1. Potatoes (large) - 3
  2. cauliflower - 1
  3. coriander - 1 tbsp
  4. oil - 2 or 3 tbsp
  5. mustard seeds - 1 tsp
  6. curry leaves - 2 sprigs
  7. salt - to taste

For the masala

  1. dry red chillies - 2
  2. turmeric - 1/2 tsp
  3. coriander - 2 tbsps
  4. asafoetida - a pinch
  5. coconut (grated) - 2 tbsp
Preparation Method
  1. Boil, peel and cut hte potatoes into large pieces.  Break the cauliflower into florets and cook with very little water until soft.
  2. Grind the ingredients for the masala to a very smooth paste. Smear the vegetable pieces with this.
  3. Heat the oi, season with the mustard and curry leaves and add the vegetables.  Fry until all the water has been absorbed and the vegetables are dry.  Add some more oil while frying if you desire it crisp and brown.  Garnish with the chopped coriander.
